Ginger Almond Nori Roll

Ginger Pate
From Ani Phyo's new book, Ani's Raw Food Kitchen
Serves 4

1 C almonds
1/4 C filtered water
1 T fresh grated ginger
1 clove garlic
1 medium lemon, juiced
1/2 tsp. sea salt

Preparation:
Place ginger, garlic and salt in your food processor with the "S" blade and process. Add almonds and process again. Add lemon juice and water and process again until a creamy texture is reached.

Lay out your nori sheets and along the bottom, spread out spinach leaves, to create dry barrier between the pate and nori. On top of the spinach leaves, spread the pate and top with grated carrots, sprouts, cucumber, or whatever suits your fancy. Roll up from the bottom.
